Main Course Share Recipe Print Turkey with Fresh Cream and Mushrooms Ingredients for 4 servings 1 large turkey fillet (Wellgoods) 4 tablespoons olive oil 1 tablespoon butter 1 onion finely chopped 2 cloves garlic finely chopped 3 cups sliced mushrooms ½ small coffee cup cognac 1 small coffee cup dry white wine 1 cup chicken stock 2 cups fresh cream 1 teaspoon finely chopped leeks ½ green pepper and ½ red pepper cut into small cubes Salt and pepper to taste Warm vegetables of your choice Method of Preparation Cut the turkey fillet into small pieces (resembling slithers) and sauté in a pan with the heated olive oil and butter Add the onion, garlic and mushrooms and cook until soft and supple Add the cognac to this (it will flare up in flames) and then put out the flames with the wine. Simmer this mixture for an extra 1-2 minutes Add the stock, the cream, the leek and the peppers and continue to simmer for another 5-6 minutes Add salt and pepper and serve on top of a plate of fresh warm vegetables Tip: You can substitute the turkey fillet with chicken breast fillet (Wellgoods) in this recipe.
