Turkey with Fresh Cream and Mushrooms

Ingredients for 4 servings

  • 1 large turkey fillet (Wellgoods)
  • 4 tablespoons olive oil
  • 1 tablespoon butter
  • 1 onion finely chopped
  • 2 cloves garlic finely chopped
  • 3 cups sliced mushrooms
  • ½ small coffee cup cognac
  • 1 small coffee cup dry white wine
  • 1 cup chicken stock
  • 2 cups fresh cream
  • 1 teaspoon finely chopped leeks
  • ½ green pepper and ½ red pepper cut into small cubes
  • Salt and pepper to taste
  • Warm vegetables of your choice

Method of Preparation

  • Cut the turkey fillet into small pieces (resembling slithers) and sauté in a pan with the heated olive oil and butter
  • Add the onion, garlic and mushrooms and cook until soft and supple
  • Add the cognac to this (it will flare up in flames) and then put out the flames with the wine. Simmer this mixture for an extra 1-2 minutes
  • Add the stock, the cream, the leek and the peppers and continue to simmer for another 5-6 minutes
  • Add salt and pepper and serve on top of a plate of fresh warm vegetables

Tip: You can substitute the turkey fillet with chicken breast fillet (Wellgoods) in this recipe.
