Trout with Almonds

Ingredients for 4 servings

  • 4 trout fillets (Wellgoods)
  • degutted and cleaned
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 4 tablespoons lemon juice
  • 4 tablespoons ground almonds (peeled)
  • 5-6 tablespoons flour
  • Warm vegetables of your choice

Method of Preparation

  • Heat the butter and olive oil in a large frying pan
  • Coat the fish in the flour and lightly fry
  • When the fish is cooked through remove from heat and sprinkle with lemon juice and the ground almonds
  • Serve the fish with a variety of vegetables of your choice and pour over a little of the butter/olive oil mixture
  • Accompany with fresh lemon slices

Tip: Trout (Wellgoods) can be deboned and then cooked using various cooking methods.
