Stuffed Calamari

Ingredients for 4 servings

  • 8 whole calamari (Wellgoods) cleaned through
  • 4 tablespoons bulgur wheat
  • 1 onion finely chopped
  • 1 clove garlic finely chopped
  • 1 red pepper finely chopped
  • 2 tomatoes finely chopped or grated
  • 1 tablespoon dill finely chopped
  • A small bunch of spinach boiled and finely chopped
  • ½ cup tomato juice
  • 1 cup white wine
  • 5-6 tablespoons olive oil
  • Salt and pepper to taste

Method of Preparation

  • Combine together the onion, garlic, bulgur wheat, tomato, dill, spinach, ½ the tomato juice, salt and pepper
  • Stuff the calamari with this mixture and place in a baking dish
  • Pour over the olive oil, wine and the rest of the tomato juice and cook in a preheated oven at 180°C for about 15 minutes
  • Remove from the oven, cut in slices and serve

Tip: The above stuffing can be altered according to your taste preferences.
