Salad with Tempura Fish Fillet

Ingredients for 4 servings

  • 4 medium sized cod fillets (Wellgoods)
  • 1 cup flour
  • 1 tablespoon sesame seeds
  • 1 small coffee cup beer
  • 1 clove garlic mashed
  • Vegetable oil for frying
  • Mixed greens for salad
  • 12 cherry tomatoes halved
  • 1 small coffee cup olive oil
  • 4 teaspoons balsamic vinegar
  • Salt and pepper to taste

Method of Preparation

  • Make the batter using the flour, beer, sesame seeds, garlic, salt and pepper
  • Cut the cod fillets into thick slices and dip in the batter
  • Heat the vegetable oil and fry the cod until golden brown
  • In a bowl mix the salad greens with the olive oil and balsamic vinegar
  • Portion the salad into 4 servings and add cherry tomatoes
  • Serve the salad with the fish still warm

Tip: Cod (Wellgoods) can also be baked, shallow fried, poached and boiled.
