Breaded Cod with Spaghetti and Tomato Sauce

Ingredients for 4 servings

  • 4 breaded cod fillets (Wellgoods)
  • Vegetable oil for frying
  • 1 whole packet boiled spaghetti
  • 5 ripe tomatoes finely chopped
  • 1 cup sliced mushrooms
  • 3 tablespoons olive oil
  • 1 onion finely chopped
  • 1 small carrot cubed
  • 2 cloves garlic finely chopped
  • 1 small coffee cup dry white wine
  • 1 tablespoon tomato paste
  • 3-4 basil leaves
  • Salt and pepper to taste

Method of Preparation

  • Heat the olive oil in a pan and sauté the onion, garlic and mushrooms
  • Add the wine and simmer until the wine has reduced
  • Add the tomatoes, carrot, tomato paste, salt and pepper and simmer until all the ingredients have blended together. Add the basil right at the end
  • Place the spaghetti in a bowl and add the sauce. Mix well so that the sauce covers all the spaghetti
  • For the fish, heat the vegetable oil in a pan and fry the fish fillets until they become a golden brown colour
  • Serve the fish fillets on top of the spaghetti

Tip: The large portions of breaded cod (Wellgoods) can be cut into smaller portions for appearance.
