Grilled Mussels

Ingredients for 4 people

  • 16 large mussels (Wellgoods) still in their shells
  • 4 tablespoons olive oil
  • Juice of ½ lemon
  • 1 tablespoon fresh dill fi nely chopped
  • 1 tablespoon breadcrumbs
  • 4 cherry tomatoes quartered
  • 2 olives quartered
  • 1 tablespoon grated halloumi cheese
  • Salt and pepper to taste

Method of Preparation

  • Combine the olive oil, lemon juice, dill and pour half of this mixture over the mussels
  • Sprinkle the breadcrumbs and the cheese over the mussels and cook in a hot oven (200°C) for 5-7 minutes or until mussels turn a golden colour
  • Decorate the mussels with the quartered tomatoes and olives and pour the other half of the olive oil mixture on top

Tip: Mussels (Wellgoods) can be cooked in many ways. You can also serve them without the shells.
